New shop offers fresh-baked cookies, ice cream and delivery into early morning hours

There is nothing sleepy about Insomnia Cookies, the latest sweet addition to Gulf Gate’s growing dining scene.
Night owls will appreciate that the new Gulf Gate location stays open well into the early morning hours, serving freshly baked cookies. Delivery is available until midnight each day. The store opened Feb. 21.
Step inside and the aroma of warm cookies quickly fills the air. Choosing just one flavor can be a challenge, with a display case filled with fresh, ready-to-eat treats. Cookie selections are frequently updated, giving customers a reason to return.
Classic cookie lovers will find familiar favorites, along with vegan and gluten-free options. Food Side Magazine described the vegan and gluten-free cookies as a “delight.”
Insomnia Cookies classic flavors include chocolate chunk, double chocolate chunk, double chocolate mint, oatmeal raisin, peanut butter chip, red velvet chunk (limited time), snickerdoodle, sugar and white chocolate macadamia.
Vegan options include birthday cake, chocolate chip, chocolate chunk and double chocolate chunk. A vegan, gluten-free chocolate chip cookie is also available.
Deluxe cookies and brownies include confetti deluxe, chocolate peanut butter cup deluxe, oatmeal chocolate walnut deluxe, salted caramel deluxe, s’mores deluxe and triple chocolate deluxe.
Brownie options include chocolate chip brownie, chocolate chunk brookie and chocolate chunk blondie.
Individual classic cookies start at $2.89. Deluxe cookies and brownies are priced at $4.69 each.
Cookie packs are available in six, nine, 12, 50 and 100-count boxes, with prices ranging from $15.29 to $225.
Ice cream offerings
Cookies are not the only indulgence. The shop also offers a variety of ice cream options. Two scoops in a cup cost $6.25, while serving ice cream on a classic cookie is $7.49. Ice cream served on a deluxe cookie or brownie is $9.29.
“Wiches” — ice cream sandwiches — are made with two classic cookies for $8.19 or two deluxe cookies for $12.99.
Ice cream flavors include vegan cotton candy; Caramellionaire — caramel cookies in salted caramel ice cream with caramel swirls; chocolate; Cookies ’n Dream — double chocolate chunk cookies in vanilla pudding-flavored ice cream; Cookie d’ough — cookie dough ice cream with chocolate chunks; Dreamweaver — purple s’mores ice cream with fudge and white chocolate pieces; Peanut Butter Insomniac Tracks — peanut butter cup cookies in vanilla ice cream with fudge swirls; and peanut butter cups in vanilla ice cream.
Vegan ice cream options include birthday cake, chocolate chunk and double chocolate chunk. A vegan, gluten-free chocolate chip ice cream is also available.
Customers can add toppings such as caramel sauce, chocolate sauce, brownie bites, M&M’s, rainbow sprinkles and chopped Snickers.
For special occasions, cookie cakes are available. A standard cookie cake is priced at $20.50, while the Triple Threat Cookie Cake costs $33.55. Each is made to order and serves eight. Customers can choose from three classic cookie flavors and add an edible image. Orders can be placed through the Insomnia Cookies app.
Insomnia Cookies partners with national and local charities, including Alex’s Lemonade Stand Foundation, the American Red Cross and the NAACP.

In-store boxed combination packs are available for purchase. Delivery is offered locally, and gift boxes can be shipped to other addresses through the Insomnia Cookies app, available in the Apple App Store and Google Play.
The Gulf Gate store hours are Monday through Wednesday, 11 a.m. to 1 a.m.; Thursday through Saturday, 11 a.m. to 3 a.m.; and Sunday, noon to 1 a.m. The shop is located at 2264 Gulf Gate Drive.
